Inspiration food

Making dinner.  Ugh, the drudgery.  Actually the making of it isn't so bad.  But the planning is the worst. It gets tedious.  So since we've decided to go all exhibitionist (not really creepy interweb) with this blog, I thought I'd post once a week about what I made for dinner that night (but not tonight), and I'd pick an inspiration food to work with through the week.  I am always trying to introduce variety into our diet and put another food on the table my children with cursorily reject.  With this week's choice I expect to have great success!

Baby Sugar Beets

Tonight with these I cleaned them, cut off the greens (which I will use tomorrow, in a yet to be determined way), rubbed them with olive oil, sprinkled them with kosher salt, and roasted them in a 375 degree oven for about an hour.  Yum!  I love them and could eat them just like that.  I also think they'll be good in a salad.  We will try that tomorrow night. 

Soundtrack provided by the sound of my own breathing and the thoughts inside my head, which I could hear because Tim took the girls out while I cooked.  Buon Appetito!
